Here's a great summer recipe (from a site we follow) that uses two of our favourite summer fruits.
Mango strawberry ice blocks (popsicles) are the perfect homemade recipe to usher in warmer spring and summer weather with delicious, seasonal fruit. With just a handful of ingredients, they’re super easy to make.
Popsicles are one of the easiest treats to make at home and perfect for all the spring and summertime outdoor festivities. I like making popsicles at home because I can ditch pretty much all the refined sugar. It’s amazing how much sugar is in store-bought desserts and it’s so unnecessary given that fruit itself is so sweet.
My only word of wisdom in making these popsicles is to truly wait at least 4 hours before trying to remove them from the popsicle mould. I was a little overzealous to photograph this recipe (and eat them), so I thought, “ahh, 3 hours is close enough” – especially as they looked frozen enough. Nope. When I tried to remove the popsicle it split in half as the mango center takes a bit longer to firm up. But good news, it refroze back together.
In terms of the recipe, you could also add lemon juice instead of lime, but trust me, lime juice perfectly complements these fruit flavors. Enjoy!
